Forest Jewel Shan Tea: A Gift from Ancient Shan Trees

High in the pristine forests of Lai Châu, near the majestic Hoàng Liên Sơn mountain range, lies a tea unlike any other. Cultivated at elevations of 2,200 to 2,600 metres, this tea comes from Shan Camellia Sinensis var. Assamica trees, some towering over 10 metres tall and thriving for centuries in the wild. Producing Green Tea

The youngest buds and leaves are usually picked.
Picking -> Withering -> Steaming/Pan-frying -> Rolling -> Drying

  • Eastern Gong Fu Hot

    Complete the basic steps: wake the tea, warm/clean the tea ware, rinse the tea.
    Tea: 5g
    Water: 100 - 120ml
    Temperature: 80-85 celsius degree
    Steeping: 15 seconds, adding 3-5 seconds for each of the next 4 infusions. Total: 5-7 infusions.

  • Western Hot

    Tea: 3-5g
    Water: 200ml
    Temperature: 80-85 celsius degree
    Steeping: 2' -3', adding 3-5 seconds for each of the next 4 infusions. Total: 3-5 infusions.

  • Cold Brew

    • Tea: 5g
    • Water: 500ml water as ice cubes

    Instructions:

    1. Place the tea and ice cubes in the kyusu, tea pot or jar
    2. Wait until all the ice melts into water.
    3. Enjoy your refreshing cold brew!
  • Cold Brew - Bottle

    • Tea: 5g
    • Water: 500ml cold water

    Instructions:

    1. Place the tea in the bottle.
    2. Pour 500ml of cold water over the tea.
    3. Seal the bottle and keep it in the fridge for 8 hours.
    4. Enjoy your refreshing cold brew!
