- 2–3 litres of water

- Add the artichokes, reduce the heat, and let it simmer for about 1–2 hours until the water turns a light golden colour with the distinct aroma of artichoke.
- If you prefer a hint of sweetness, add a bit of rock sugar in the last 15 minutes, stirring to dissolve.

- Strain out the artichokes, keeping only the tea.
- Let it cool slightly, then pour into a glass. You can enjoy it warm or cold. Artichoke tea can be stored in the fridge and enjoyed over the next 2–3 days.
